Captain Ronnie Irani struck an unbeaten 122 as Essex made Surrey pay for four dropped catches by posting 365-9.
Irani had made four when he was dropped at slip by Azhar Mahmood but went on to his 25th first-class hundred.
The skipper was particularly severe on spinner Nayan Doshi, hitting him for 16 in one over with two straight sixes.
Andre Adams had made only 12 when he was also dropped, by Mohammad Akram at mid-on, and went on hammer 14 fours and two sixes in a brisk 75 from 99 balls.
Rikki Clarke was the unlucky bowler on that occasion but gained his revenge shortly before the close as Adams holed out, ending a stand of 124, an Essex ninth-wicket record against Surrey.
Ian Salisbury captured two wickets in two balls twice in his first four-wicket Championship haul for three years, recording his 800th first-class victim in the process.
