Although fraught with challenges, their Duchy organic Brie, has recently won the trophy for 'best soft white cheese' in the UK.

The distinctive flavour comes from the ripening process - in the olden days this would have been done in a 'cheese cave', where it was wet and cold.

Nowadays it is all done in a temperature controlled room.

The cheeses are made with organic Cornish milk and have a smooth buttery texture and with a mild creamy flavour.
