One of the most impressive events to watch at the Games, especially the events held on whitewater.
That's water that moves extremely quickly downhill and has whirlpools and waterfalls in it to make it tough for the canoeists.
The competitors have to go down the course and get through a series of gates in order without hitting any of them.
Sometimes they need to fight their way upstream against the current, which is very tough.
There are also flat water events where the competitors are placed in lanes and have to race each other across distances of either 500m or 1,000m.
Who are the British hopes for Athens?
Tim Brabants won bronze in the K1 1,000m in Sydney, and as a former world junior champion, knows about winning big events.
Who are the big stars?
New Zealander Ben Fouhy will be a big rival to Brabants in the K1 1,000m and as the second fastest paddler of all time over the distance, will be very tough to beat.
Szilvia Szabo and Kinga Bota are three-time world champions in the doubles kayak over 500m and will be hoping to do better than their silver at the Sydney Games.
