Mr Zhang uses a brick oven that burns fruit-tree wood delivered from the suburbs of Beijing. It is piled up outside the restaurant.

Using a pole, the chef hangs the ducks inside the oven on horizontal bars, where they cook for about 40 minutes.

This technique was apparently used in China's imperial courts.
