Out come the intestines

After the feet are cut off, the ducks' internal organs are pulled out – the heart, the liver, the stomach and the intestines.

Most are used as ingredients in other dishes served at the restaurant.

The room where Mr Zhang's assistants take out the organs is small, hot and littered with duck parts – it is no place for the faint-hearted.
