Deep inside the Arctic Circle in Northern Canada Stefan met Harry, an Inuit.

Harry allows him to try some igunak - raw walrus meat which has been wrapped and buried and left to decompose for at least a year.

In the past, when no hunting was possible and other supplies had run out, a slab of igunak might mean the difference between life and starving to death.

Despite its extremely strong flavour, it is considered as a delicacy by many Inuit.
