The great British staple dinner of fish and chips celebrates its 150th anniversary in 2010.

Despite the recession sales are up, and the National Federation of Fish Friers' course for newcomers keen to join the profession has seen a doubling in demand for places.

Tutor Mark Drummond showed pupils the tricks of the trade.
