Emergency services, including armed response officers, were called to Mr Pester's home at 1825 BST on Wednesday after the shooting.
He was taken to the city's Derriford Hospital for treatment after being pistol-whipped and shot in the stomach on his doorstep.
Police said "high-value" jewellery was stolen in the incident, including two gold Rolex watches and a number of women's rings.
Mr Pester runs a car dealership in the Mutley area of Plymouth and neighbours said the home he shares with his wife, son and daughter, had been broken into on a number of occasions.
Police have urged anyone with information about the shooting to come forward.
