Restaurant magazine voted Copenhagen's Noma as the number one restaurant in the world in 2010 and 2011.
The restaurant specialises in serving food sourced only in Denmark and the rest of the Nordic region.
Located next door to Noma is the Nordic Food Laboratory which chef Rene Redzepi helped to found.
He says the lab's mission is to discover delicious new flavours from a variety of sources including juniper wood.
Stephen Sackur talks to Mr Redzepi about the lab and the success of Noma.
