How clean is the kitchen?
How well has it been prepared?
It seems that good hygiene is just as important as fine food when we eat out.

A Europe-wide survey has found that restaurants who serve up meals on dirty crockery are likely to drive customers away for good.

So caterers are being warned to clean up their act - Breakfast's Yvonne Ndege was at the Birmingham College of Food.

Yvonne talked to Bill Farnsworth - the Director of Catering. He said:

The Public are more aware of hygiene. When they enter they look at cutlery, state of glasses, and some even check the toilets. This is a good indication as it shows if management are interested in state of toilets they will be interested in cleanliness throughout the restaurant. Students at the college are trained to check surfaces are cleaned before and after food preparation. They check their whites are cleaned and hands properly washed before touching food. They are taught to make sure food is stored properly. Chopping boards are colour coded to stop cross contamination.
